- Also called a Fairness Pitcher, brewed tea is first poured from teapot or gaiwan in to the small pitcher before being served into teacups. Tea served directly from a teapot would keep brewing from cup to cup so the first person wouldn't necessarily be tasting the same tea as the last person served. The pitcher is a useful way to ensure everyone tastes the same cup of tea and gives the tea master greater control over the infusion time of the leaves.
