This heavily roasted tea likes to offer up notes of dark chocolate truffle and raspberry. Later steeps reveal the sweet and floral side of TiKwanYin. Michael will usually use the Classic Roast for his Chiu Jao Gong Fu Cha ritual. When prepared in this classic way, the tea becomes a bolder declaration of itself. Richer and more concentrated with an almost chewy texture, the sharp edges give way to a long sweet finish.
